There are several tricks to keep these aromatic herbs always fresh.

The one I use the most is:
1- Chop the herbs. Either one herb or a mixture of several.
2- Place in a previously sterilized glass jar (either boiled or washed with bleach).
3- Cover them completely with sunflower or corn oil. (You should use an oil that won't solidify in the refrigerator.)
4- Always keep it in the refrigerator.

Then, always using a clean fork, you remove only what you will use; when you use the fork, the oil filters out.
Finally, the remaining oil will be flavored with herbs, making it ideal for dressing salads or making pesto, Provençal sauce, or Argentine Creole sauce. It's best used in cold preparations, as it will contain traces of the herbs.
